Arugula Pesto Pasta

Pesto Pasta is a delicious and easy dish to make. Here's how to prepare it:

Ingredients:

  • 8 ounces (about 2 cups) of your favorite pasta (such as spaghetti, linguine, or penne)
  • 1/2 cup arugula pesto (see my for the arugula pesto recipe before)
  • 1/4 cup grated Grana Padano cheese
  • Salt and black pepper to taste
  • Optional toppings: Fresh arugula leaves, additional grated cheese, or toasted nuts

Instructions:

  • Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Add the pasta to the boiling water and cook according to the package instructions until it's al dente, typically about 8-10 minutes.
  • Reserve Pasta Water:
    • Before draining the pasta, scoop out about 1/2 cup of the pasta cooking water and set it aside. This starchy water will help create a creamy sauce when mixed with the pesto.
  • Drain and Toss:
    • Drain the cooked pasta and return it to the pot.
    • Add the arugula pesto to the pasta and toss to coat the pasta evenly. If the pesto is too thick, you can gradually add some of the reserved pasta water to achieve your desired consistency.
  • Season and Add Cheese:
    • Season the pasta with salt and black pepper to taste.
    • Sprinkle the grated cheese over the pasta and toss again to combine.
  • Serve:
    • Divide the arugula pesto pasta among serving plates.
    • If desired, top each serving with fresh arugula leaves, additional grated cheese, or toasted nuts for extra flavor and texture.
  • Enjoy:
    • Serve your arugula pesto pasta hot, and enjoy!
