Arugula Egg Wraps, delicious and healthy in just 10 min.
Ingredients:
- 4 large organic eggs
- 1/4 cup milk (you can use dairy or non-dairy milk)
- Salt and pepper to taste
- 1 tablespoon olive oil
- 2 cups fresh arugula
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese (optional)
- 4 large tortillas or wraps
Instructions:
- Whisk Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Heat Olive Oil: Heat the olive oil in a non-stick skillet over medium-high heat.
- Cook Eggs: Pour the egg mixture into the skillet. Allow it to cook without stirring for a minute or two until it starts to set at the edges.
- Add Arugula and Tomatoes: Sprinkle the arugula and cherry tomatoes evenly over the eggs.
- Finish Cooking: Continue to cook the eggs, lifting the edges with a spatula and tilting the pan to let the uncooked eggs flow to the edges. Cook until the eggs are fully set but still slightly moist on top.
- Add Feta (Optional): If you're using feta cheese, sprinkle it over the egg mixture just before folding.
- Assemble Wraps: Warm the tortillas or wraps in a dry skillet or microwave for a few seconds. Place a portion of the cooked egg mixture onto each tortilla, positioning it toward one edge.
- Roll and Serve: Carefully fold in the sides of the tortilla and then roll it up from the filled edge, creating a wrap.
- Slice and Enjoy: Slice the wraps in half diagonally if desired and serve immediately.
You can customize these wraps by adding other ingredients like sautéed mushrooms, bell peppers, or avocado slices to the egg mixture before rolling them up. Feel free to get creative with your fillings and seasonings to suit your taste!
